the creamiest zucchini soup

When do you think of zucchini?

I always think of zucchini soup when it starts getting cold and raining outside. Some people make a vegetable broth and add anything they have lying around, but I like to keep things simple as I used chicken bouillon and full cream milk for a rich, creamy and flavourful base.

Zucchini is an excellent vegetable when it comes to nutrients. It has protein, potassium, magnesium, and vitamin C in high concentrations. Zucchini soup is a great dish for people who are on certain diets like vegan or gluten-free because it has no animal products or wheat!

Pairs well with a crusty piece of bread or a cracker, or try adding crunchy ham bits and a tablespoon of heavy cream to enhance the flavor!

How to Make the Perfect Creamiest Zucchini Soup

Zucchini is a summer squash that is available year-round. It is a great vegetable for making soup, as it has a mild flavor and doesn’t overpower the other ingredients.

In order to make creamy zucchini soup, you will need:

  • 3 tablespoons olive oil
  • 1 knob of butter
  • 3 tablespoons all-purpose flour
  • 4 cups of chicken broth
  • 1 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 cups of full cream milk
  • 4 cups shredded zucchini (about 2 medium zucchini)
  • 2 cups chopped yellow onion (about 1 large onion)
  • 1 garlic clove, minced
  • 1 teaspoon of dried thyme
  • chili flakes (optional)

The secret to making the perfect creamy zucchini soup is to use an immersion blender. A blender will give you a smooth, velvety texture that you can’t get with any other kitchen utensil.

Some people are hesitant to use a blender because they are afraid that it will make their soup too thick or lumpy. But this is not true! Blending your soup will make it more flavourful and smoother, not thicker or lumpier.

Preparation

Here are the preparation steps to create the perfect creamiest zucchini soup at home in 10 easy steps! This soup is very easy to make and requires only a few simple ingredients.

The most crucial part is the cooking process, which will turn out to be very simple if you follow these steps.

  1. Wash, peel the zucchini, and slice into small pieces. Repeat the same with celery.
  2. Slice the onion in half and chop it up finely. Minced the garlic. Put aside
  3. Heat a medium-sized dutch oven pot over medium-high heat. Add the olive oil and knob of butter.
  4. Add the onions and celery, season with salt and black pepper, then saute until the onions are soft and translucent. Add flour and continue to saute for 1 minute.
  5. Add the zucchini, thyme, salt, and pepper and stir well.
  6. Add the vegetable stock and cover the pot, letting everything come to a boil in medium-low heat.
  7. Once it comes to a boil, reduce the heat to low and let simmer for about 15 – 20 minutes.
  8. Add the full cream milk, let simmer another 5 minutes before removing the pot from the heat.
  9. Puree with an immersion blender (or in a standard blender by batches).
  10. Ladle and serve the soup into bowls. Garnish with chili flakes and a drizzle of olive oil for the final touch.

The Best Way To Enjoy Your Creamy Zucchini Soup

creamiest zucchini soup

A creamy zucchini soup is a delightful meal that can be served as the main course of the day. You can use this soup to make a quick lunch or dinner. It is also perfect for entertaining guests.

Here are some tips on how to make a comforting soup:

  • Use homemade vegetable broth instead of chicken broth for a vegetarian option.
  • Opt for plant-based milk like oat, almond milk, or coconut milk for a creamy dairy-free soup.
  • Add crispy bacon bits or parmesan cheese for an extra flavor boost (Optional)

It is always a good idea to start with a slice of crusty bread and a side salad. This gives you something to mop up the soup with and also provides some healthy nutrients to balance out all those carbs.

The next step is to take a spoonful of soup and put it in your mouth, but don’t chew yet! The first taste should be as pure as possible, so just hold it in your mouth for a few seconds before swallowing.

Next, chew slowly and savor each bite – this will really bring out all those tasty flavors that you worked so hard for!
