How to Make the Best Mandu-Guk Recipe
I’m using sliced beef brisket this time, but if you can’t get your hands on any beef, you may choose to use anchovy stock. If you don’t have time to prepare your mandu, you can always buy it. Any Korean grocery store should have these in the freezer department.
It is a straightforward recipe since it only requires a few ingredients.

Ingredients

- 200 grams sliced beef brisket, cut to bite-sized, small pieces
- 1 cube beef stock
- 6 cups of water
- Three cloves garlic, minced
- 2 spring onions, sliced
- 10 pieces store-bought frozen dumplings or homemade dumplings
- Two eggs
Sauces and Seasoning
- 1 tablespoon fish sauce
- 1 teaspoon sesame oil (toasted)
- 1/2 teaspoon ground black pepper
Method

- Firstly, add the beef stock, beef brisket, and garlic into the boiling water to make the broth. Cover and turn the heat to medium. Continue to boil and simmer for 30 minutes in medium-low heat until beef is soft and tender.
- Meanwhile, separate egg whites and yolks, stir well, then season with salt. Pour the egg whites into a non-stick skillet. Swirl the egg to cover the entire pan, so the mixture spreads thinly. Turn off the heat and let the residual heat cook the eggs through for about 1 minute. Repeat the same with the egg yolks mixture. Then, place both eggs on a cutting board to cool down before rolling the eggs and cutting them thinly into egg ribbons.
- Add in the ten frozen dumplings and turn up the heat to medium-high. Cook until all dumplings are floating to the surface and turned slightly translucent. Usually, frozen dumplings will take about 9 to 10 minutes to be fully cooked.
- According to taste, add fish sauce, season with salt, and ground black pepper. Lastly, add toasted sesame oil and green onion, let it simmer for 1 minute before turning off the heat.
- Serve right away with rice noodles and garnish with yellow and white egg ribbons and sliced green onion.
