Egg Cups are a great way to pack nutrition and one of the most convenient Air Fryer breakfasts to clear the extra unused leftovers from the fridge!
Egg cups are low-carb because they contain eggs high in protein. They also have ingredients like cheese or bacon to add flavor.

If you’re looking for a healthy, easy, and tasty breakfast that you can take on the go using an Air Fryer, then it’s time to try Egg Cups! You’ll be amazed at how little cook time they take to make in an air fryer, and they’re perfect for meal prepping too. Prepare them using silicone baking cups and keep them in a freezer-safe airtight container.
When we have little time for cooking, I can make these Egg Cups with eggs, cheese, onions, breakfast sausage or bacon, salt, and pepper in the morning. Add whatever veggies you have on hand using silicone muffin cups, disposable muffin tins, or silicone egg mold. I like to add broccoli, frozen peas, or carrots for the rainbow colors. In just 9 minutes, your healthy breakfast is ready to eat!
Remember to let it cool for few minutes first before taking the muffin tins or silicone muffin cups out of the air fryer basket (wear protective gloves) because of the hot steam from the baked eggs!
Typical English Muffin is flour, butter, sugar or honey, and eggs. The batter is mixed together in a medium bowl and cooked in the oven until it slowly rises into a dome shape. But this recipe for an egg cup has no flour, and it is very delicious!

These mini frittatas are perfect for those who like to have eggs for breakfast with little cooking time and want to do something different. These frittatas are filled with so much flavor and juicy vegetables that you won’t even miss the toast anymore!
The silicone cups will hold one egg each. Here is the list of ingredients for Air Fryer Recipes:
1. Spinach and Feta Cheese
- 1/4 cup steamed spinach (or lightly stir-fried with minced garlic)
- 1,2 knobs of Feta cheese, sometimes more (my favorites are goat cheese and mozzarella for the ‘pully’ effect)
- Egg whites
- Salt & pepper, to taste
- Nonstick cooking spray, preferably Avocado oil
2. Frozen mixed vegetables and ham
- Two tablespoons of mixed vegetables (or any unused leftovers vegetables like broccoli, cauliflower, or colorful bell peppers)
- One tablespoon of diced tomato (on busy mornings, I sometimes add one teaspoon of passata)
- few chopped ham cubes or slices of smoked bacon (can replace with sliced mushrooms too)
- One large egg, beaten
- few teaspoons of shredded cheddar cheese (for the crispy top)
- salt & pepper, to taste
3. No Carb (no vegetables)
- Two tablespoons of cooking cream or cream cheese
- Any smoked meat or cooked sausage
- One large egg, beaten
- salt and pepper, to taste
We love serving our egg cups with diced avocado in ceramic ramekins with garden salad or chopped tomatoes on the side for added nutrition for a complete, wholesome breakfast or brunch.

Pam Kissol’s Air Fryer Egg Bites Recipe
- Stir-fry 2 handfuls of spinach with a teaspoon of diced garlic (I like a garlicky spinach stir fry)
- A couple of teaspoons of diced tomatoes for each silicone cup
- A couple of diced hams (or SPAM), whichever works. (Optional)
- One medium egg
- 1 teaspoon of heavy cream
- salt and black pepper for taste
- few slices of Cheddar
- dried spices or chili flakes for toppings
Method
Firstly, choose one of your preferred air fryer accessories. For this recipe, I choose silicone cups. Carefully oil the cups with butter or, better, spray with Avocado oil. Place one thin layer of stir-fried spinach, then tomatoes and ham bits.
Next, pour the beaten egg into the cups and use a spoon (usually I use chopsticks) to mix the ingredients carefully. Lastly, arrange the sliced Cheddar on top, sprinkle the top with chili flakes or dried spices of your liking. Then pop the silicone cups into the air fryer’s basket, line with one piece of the baking sheet, set the baking temperature to 200 C, and time at 6 minutes.

You may add a few more minutes if you wish it to be fully cooked through. Let it cool, remove the Air Fryer Egg Bites from the cups, and serve with sour cream, jalapeno, and salads on the side.
I love my Air Fryer Egg Bites to be slightly charred or burnt; hence I power the air fryer for additional 3 minutes cooking time (not more than 9 minutes) just hit the spot ?
Whenever I wish to achieve the perfect Air Fryer Breakfast meal, a simple cucumber salad with roasted sesame dressings, pickled jalapeno, and a small dollop of sour cream is delicious to kick-start your morning strong!
